Cassava Suman is a Filipino rice cake made from the Cassava (Manioc) tuber. It is very easy to make, and provides a hearty snack option for the food-lover. This recipe yields about 12 medium sized cassava sumans.

    Assemble the ingredients. You will need:
    • 1 cup coconut milk
    • 2 cups grated cassava
    • 3/4 cup sugar
    • 1 cup grated young coconut
    • 12 Blanched banana leaves (these serve as wrappers)

    In a pot, cook grated cassava and coconut milk until thick.

    Add sugar and grated young coconut.

Tips

  • To test for done-ness, you can employ a method used in baking. Gently poke a suman with a toothpick. If nothing sticks to the toothpick after being withdrawn, then your suman is done.
