How to Cook Fried Chanterelles

Fried chanterelles make a very healthy and tasty dish. This dish can be served with roasted potatoes, on thick toast, with rice or with cous cous, or, just about anything else you like.


  • 1kg of chanterelles
  • 1 onion
  • 2-3 garlic cloves
  • Salt
  • Vegetable oil
  • Fresh herbs
  • 5 tablespoons of sour cream

Method 1
Cooking fried chanterelles with garlic

    Wash the mushrooms thoroughly. Cut them into small pieces. Small mushrooms do not need to be cut.

    Pour some water into a saucepan. Place on the stove and wait till the water is boiling. Then add the chopped chanterelles.

    Cook the mushrooms for about 15 to 20 minutes. Drain the water from the pan when cooked.

    Сut cleaned onions into rings, while chanterelles are cooking. Take the garlic, peel it, wash and cut into slices. Pour some vegetable oil into the pan, put the chopped onion and garlic and fry them over a low heat, till the onion is soft.

    Add cooked mushrooms to the vegetables. Slightly increase the heat and fry on medium heat for about 20 minutes. The readiness of this mushroom dish can be identified by its color - the color of the finished chanterelles becomes brighter, and the onion wilts and becomes almost invisible in the pan.

    Salt the mushrooms and hold them on the heat for another 2 to 3 minutes. If you desire, you can drip 2 to 3 drops of lemon juice to the finished dish. This will give it a special flavor. Before serving, fried chanterelles is recommended to decorate with fresh herbs.

Method 2
Cook fried chanterelles with sour cream

    Cook the same way as in the previous method. However, this time do not add any garlic. Instead, add sour cream to the pan. Do not forget to salt the dish before.

    Fry the mushrooms in the sour cream for 2 to 3 minutes, then turn off the heat.

    Transfer the sour cream soaked fried chanterelles on a beautiful dish. Sprinkle the mushrooms with pre-washed and finely chopped dill and parsley.
