How to Make a Carrot Cake Cookie Sandwich

These carrot cake sandwiches are put together using fluffy carrot cake cookies and a creamy filling. The recipe also uses carrots, whole grains and a host of other healthy ingredients to create a guilt-free treat.


Servings: About 20

  • 1/2 cup golden raisins
  • 1/2 cup hot water
  • 2 eggs, room temperature
  • 1/2 cup unsweetened applesauce
  • 2 tbsp. butter, room temperature
  • 1/2 cup brown sugar
  • 1 tbsp. vanilla extract
  • 1 cup whole wheat pastry flour
  • 1/2 cup wheat bran
  • 1 cup oats
  • 1/2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1 tsp. kosher salt
  • 1 tbsp. cinnamon
  • 1 tsp. pumpkin pie spice
  • 3/4 cup pecans, toasted and chopped
  • 1-1/2 cups carrot, peeled and shredded


  • 2 cups Greek yogurt
  • 1/4 cup honey
  • 1 tsp. cinnamon

Method 1
Mix the Cookie Dough

When you have finished with this dough, the texture will be more like cake dough than traditional cookie dough. If you can’t find golden raisins, then simply substitute regular raisins.

    Preheat the oven to 325°F (160°C) and line a baking sheet with parchment paper.

    Place the golden raisins in a bowl and pour the hot water over them to allow them to soak while you prepare the other components of the cookie dough.

    Whisk the eggs, applesauce, butter, brown sugar and vanilla extract together in a mixing bowl.

    With a clean whisk in a separate bowl, mix the flour, wheat bran, oats, baking soda, baking powder, kosher salt, cinnamon and pumpkin pie spice together until the ingredients are well combined.

    Add 1/3 of the dry ingredients to the wet ingredients and mix with a wooden spoon until the dry ingredients are just incorporated.

    Continue adding 1/3 of the dry ingredients at a time and mixing them into the wet ingredients.

    Remove the raisins from the water with a spoon and discard the water.

    Place the raisins, pecans and carrots in the mixing bowl with the other ingredients and fold them in with the wooden spoon until they are distributed well throughout the dough.

Method 2
Bake the Cookies and Assemble the Filling

The dough will be too wet and soft to handle with your hands, so make sure that you use a cookie scoop, ice cream scoop or tablespoon to place the dough onto the baking sheet. Leave about 1” (2.5 centimeters) of space around each cookie so that they have room to spread as they bake.

    Scoop the dough onto the baking sheet using either a cookie scoop or a tablespoon.

    Bake the cookies for 12 to 16 minutes. When they are done, the center will be set and the edges will be slightly browned.

    Whisk together the Greek yogurt, honey and cinnamon in a bowl while the cookies are baking.

    Cover the bowl with plastic wrap and place it in the refrigerator to allow it to set.

    Remove the baking pan from the oven and cool the cookies for 2 minutes on the stovetop before loosening them from the parchment paper with a spatula.

    Transfer the cookies to wire racks and allow them to cool completely before adding the filling.

    Cover the baking sheet with a fresh piece of parchment paper after you have finished baking the cookies.

Method 3
Assemble the Cookie Sandwiches

Make sure that you completely cook the cookies before adding the filling to the cookie sandwiches. Otherwise, the filling will melt and become drippy.

    Place a cooled cookie on a work surface with the bottom of the cookie facing upward.

    Spread some of the filling on the bottom of the cookie using a cheese spreader or a butter knife.

    Place a second cookie on top of the filling with the top of the cookie facing you.

    Place the completed cookie sandwich back onto the baking sheet. Continue creating cookie sandwiches until you have used all of the cookies.

    Cover the baking sheet with plastic wrap and freeze the cookies for 30 minutes. Serve them with a cup of Earl Grey tea or coffee.


  • For a more decadent filling, use vanilla ice cream or cream cheese frosting. To make cream cheese frosting, whisk together 8 ounces of softened cream cheese, 1 cup of powdered sugar or Sucralose sugar substitute and 2 teaspoons of vanilla extract.
  • If you have no whole wheat pastry flour, then you can simply substitute all-purpose flour.
