How to Make a Chocolate Peanut Butter Parfait

Looking for a mouth watering dessert that blends the creamy goodness of peanut butter with the decadent delight of chocolate? Forget the peanut butter cups. Instead create a chocolate peanut butter parfait. This recipe also adds a hint of graham cracker for a little extra crunch.

Ingredients

  • Package of graham crackers, crumbled
  • 1 cup creamy peanut butter
  • 1 8-ounce (225 grams) block of cream cheese
  • 4 tablespoons powdered sugar
  • 1 8-ounce (225 grams) tub of whipped cream (or you can make your own)
  • 1 12-ounce (340 grams) bag of milk chocolate chips
  • ½ cup whole milk

Combine Thick Ingredients

    Mix the peanut butter, cream cheese and powder sugar in a large mixing bowl. If possible, combine ingredients in a large Kitchen Aid mixer for a better blending result.
    • Combine until the mixture is fully integrated and almost a crumbly consistency.

    Fold in whipped cream. Forgo the mixer for this step and instead use a rubber spatula to integrate the cream into the peanut butter, powdered sugar and cream cheese combination. Mix well until the whipped cream has become part of the mixture.

Part 2
Melt the Chocolate

    Melt chocolate chips and milk. Melting chips and milk can be done two ways––in the microwave or on the stove top. The stove is preferred.
    • Microwave chocolate chips and milk by placing them into a microwavable glass bowl. Set the microwave for 30 seconds and then stir the mixture. Return to the microwave for 30 more seconds, while watching the chocolate chips melt. Keep a careful eye on the microwave as you don’t want to burn the mixture. Stop microwaving when the majority of the chocolate chips have melted.
    • Place the milk and chocolate chips in a double boiler over medium to medium low heat. Stir the mixture constantly as it cooks and melts. Remove the mixture from the heat before every chip has melted. The residual heat from the milk will melt the rest of the chips.

Part 3
Create the Parfait

    Select serving dishes. You may want to use individual bowls or dishes to create your parfaits.

    Drop one layer of crumbled graham crackers in the bottom of each dish. You want enough to create a “crust” along the bottom.

    Plop in a few tablespoons of the peanut butter mixture. The size of your bowl or dish will generally determine how much peanut butter mixture you add. Add enough so you can layer each of the ingredients two times.

    Add the chocolate mixture. Add the mixture after it has cooled and is no longer extremely hot; this will stop it from tainting any of the other ingredients.

    Top with a dollop of whipped cream. This step is optional but can enhance the flavor of the chocolate and peanut butter combination.

    Sprinkle more crumbled graham crackers over the top. Create a thin layer of graham crackers.

    Repeat the process again until you’ve ended with a second dollop of whipped cream.

    Top off with a graham cracker square or a piece of good chocolate sticking out of the middle.

Tips

  • Get creative with the toppings––include sprinkling small chocolate and/or peanut butter chips on top or adding a half (or a mini) of a chocolate covered peanut butter cup on top.
  • Consider serving in old fashioned ice cream sundae glasses for a fun effect.
  • Leave covered in the refrigerator until ready to serve, so that the ingredients congeal and set.
  • If possible, have kids make this themselves. It is easy, simple, and fun too.
