How to Make Armenian Hachapuri

Hachapuri is a Caucasian dish. However, there are recipes in the Georgian, Armenian, Azerbaijani and other cuisines as well. They are delicious. They taste best when served hot, but cold they are also delicious. Try to make some, they are easy to cook and very yummy. Can also be used instead of bread, like the Mexican tortillas.

Ingredients

For the dough

  • 3 cups flour
  • 1 cup kefir or buttermilk
  • 1 egg
  • 1 tsp. salt
  • 1 tsp. sugar
  • 2 tsp. baking powder
  • 1 tbsp. oil (canola, sunflower)
  • some butter or oleo

For the filling

  • 10 oz hard cheese,
  • 1 egg, 1 clove garlic,
  • parsley

This makes 10 Hachapuri.

Steps

    Mix 2 cups flour with the baking powder.

    In another bowl mix the kefir/buttermilk with the sugar, the salt and the oil.

    Add the dry ingredients to the wet ingredients.

    Gradually add the third cup of flour till you get a smooth and elastic dough.

    Grate the cheese.

    Chop the garlic and the parsley and add it to the cheese.

    Add the egg. Mix well.

    Divide the dough into 10 balls. If the dough is sticking to your hands add some more flour.

    Divide the filling into ten portions also.

    Take one of the dough balls and roll it out.

    Put the filling in the middle.

    Stick the ends of the dough together so it forms a "pocket".

    Turn the pocket around and roll it out till you get a size of a pancake. It will look as a pancake also.

    Place the pan on the heat.

    Take your hachapuri and put it on the hot pan. You don´t need any oil!

    Fry it on both sides till its golden brown. You will have to turn it around several times.

    Take the hachapuri from the pan and butter it a little on both sides. Now it´s ready to be eaten!

Tips

  • Fry them on medium or low heat.
  • Besides parsley or instead you can use other seasoning you like.
  • For the filling take any hard cheese you like. Best to take a sort which does not contain too much salt.
