How to Make Berry Poutine

Muguette Paillé of Quebec became a recent internet sensation when she asked Canadian politicians what they were going to do to find people over 50 work in Quebec.[1] Within a few hours she had a Facebook page made in her honour, she became one of the top trends on Twitter for Canada,[2] and now her berry poutine recipe is doing the rounds online. Here it is, adapted from the French version.[3]


  • Enough strawberries or other berries to cover the base of the dish (amount is to your preference)
  • Sugar, generous amount for sprinkling
  • 2 cups of flour
  • 1 cup white sugar
  • 1 tablespoon baking powder
  • 1 cup milk
  • 2 eggs
  • 20 ml melted butter
  • Pinch of salt
  • 1 teaspoon vanilla tea

    Preheat the oven to 180ºC/350ºF.

    Arrange a good quantity of strawberries or other berries across the base of the ovenproof dish. Sprinkle generously with sugar.

    Make the cake part. Mix together all the remaining ingredients in a large mixing bowl.

    Pour this mixture over the sugared strawberries.

    Place in the oven for 30 minutes or until a skewer or toothpick stuck into the cake comes out clean and dry.

    Remove from the oven and serve. It goes well with custard, ice cream, or cream. Bon appétit!


  • Naturally, this is "poutine" dessert-style, not poutine fries style.
  • Any fruit you like can go into making this - raspberries, blueberries, apples, whatever.
