How to Make Berry Ricotta Hotcakes

Berry Ricotta Hotcakes are a delicious dessert or snack. Here is a simple recipe.

Ingredients

  • 4 cups of self raising flour
  • 4 teaspoons of sugar
  • 6 lightly beaten eggs
  • 3 cups of milk
  • 100g of melted butter
  • 2 punnets of raspberries
  • 500g of Italian Ricotta
  • Toasted almonds
  • Maple syrup and icing sugar for serving.

Steps

    Put the flour and sugar in a bowl and stir them.

    Mix the milk and eggs together. Stir until it is very smooth. Add the whisked eggs and milk to this.

    Stir in half of the raspberries.

    Pour one sixth of the bowls mixture into a frying pan and swirl in one teaspoon of ricotta.

    Cook until there are bubbles on top of the cooking mixture.

    Turn over the hotcake and cook until it is golden brown.

    Serve the hotcakes with any left over ricotta and the almonds, maple syrup and icing sugar.

Tips

  • The recipe says raspberries but really you can use any berry, such as blueberry and strawberry.
