How to Make Candied Pecans

Candied pecans are easy to make and loaded with protein and healthy fats. You can toast them up in a pan in a matter of minutes, or for even more flavor, roast them in the oven. And you can make dozens of varieties by varying the spices you use. Whether you make spicy, sweet and salty, or cinnamon and sugar pecans, they taste delicious as a snack or as a topping on salads or desserts.

Ingredients

Quick Toasted Candied Pecans

  • 2 cups pecan halves
  • 4 tablespoons salted butter
  • 4 tablespoons brown sugar
  • Optional: ¼ teaspoon salt (use unsalted butter)
  • Optional: ¼ teaspoon vanilla
  • Optional: 1 teaspoon cinnamon
  • Optional: 1/2 teaspoon cayenne

Healthy Quick Toasted Candied Pecans

  • 2 cups pecan halves
  • 3 tablespoons packed brown sugar
  • 3 teaspoons water
  • ¼ teaspoon vanilla
  • ¼ teaspoon kosher salt

Roasted Candied Pecans

  • 1 pound pecan halves (approx. 4 cups)
  • ½ to 1 cup sugar (to taste)
  • 1 to 3 teaspoons cinnamon (to taste)
  • 1 to 1.5 teaspoons salt (to taste)
  • 1 egg white
  • 1 tablespoon water

Method 1
Making Quick Toasted Candied Pecans

    Mix dry ingredients in a small bowl. Add a ½ to 1 cup sugar depending on how sweet you want your nuts to be,[1] as well as up to 1 teaspoon of salt. You can also add other ingredients to spice up the recipe:
    • Add 1 teaspoon cinnamon for delicious cinnamon-sugar nuts.[2]
    • Add ½ teaspoon cayenne pepper for spicier nuts.[3]
    • For really flavor-packed nuts, add ¼ teaspoon cumin, ¼ teaspoon cayenne pepper, ¼ teaspoon cinnamon, and ¼ teaspoon dried ground orange peel.[4]

    Melt the 4 tablespoons of salted butter over medium-high heat. Substitute unsalted butter if you are using salt in the recipe.[5]

    Add the pecans and toss to coat with butter.

    Add the sugar and spices and stir for 5-7 minutes. You want to keep stirring until the sugar melts and coats the nuts, which should become golden brown and release a strong nutty aroma.[6]

    Transfer the nuts to a sheet of wax or parchment paper to cool. Either separate them immediately using two forks, or wait until they have cooled and break the nuts apart. Store in an airtight container.[7]

Method 2
Making Healthy Quick Toasted Candied Pecans

    Toast pecans over medium heat for 2-3 minutes. Toasting will make the nuts more fragrant and flavorful.[8] Stir occasionally to prevent burning. Toast until they release a strong nutty aroma, then remove from the pan and set aside.[9]

    Mix the 3 tablespoons of brown sugar, 3 teaspoons of water, ¼ teaspoon of vanilla, and ¼ teaspoon of kosher salt in a small bowl. Stir to combine. Do not worry if all the sugar and salt don’t dissolve.[10] You can also add additional ingredients to spice up the recipe:
    • Add 1 teaspoon cinnamon for delicious cinnamon-sugar nuts.[11]

    Cook the sugar mixture over medium heat, stirring frequently. Cook until the sugar dissolves and is bubbling – approximately 5 minutes.[14]

Method 3
Making Roasted Candied Pecans

    Preheat the oven to 250 or 300 degrees F and line a baking sheet with parchment paper or greased aluminum foil. Lower temperatures will allow for longer baking, bringing out more of the nut's flavor.[17]

    Mix the sugar, cinnamon, and salt in a bowl. You can also put them into a plastic bag and shake it to mix them.[18]
    • Use 1 teaspoon to 1 tablespoon of cinnamon, depending on taste.
    • You can omit the salt, or use up to 1.5 teaspoons, depending on how salty you like your nuts.[19]
    • Use ½ to 1 cup sugar, depending on how sweet you want the nuts to be.
    • You can use white sugar[20], confectioners sugar for a more even glaze,[21] or ½ white and ½ brown sugar for more flavor.[22]

    Consider adding other spices. You can make the nuts spicier, or give them more of a holiday feel by adding more spices along with the cinnamon.
    • Add ½ teaspoon cloves and ½ teaspoon nutmeg to give the nuts a winter holiday season aroma.[23]
    • For spicier nuts, substitute a teaspoon of cayenne pepper for the cinnamon.[24]
    • For just a hint of spice, add 1/8 teaspoon of cayenne pepper along with the cinnamon.[25]

    Whisk the egg white and water together in a separate bowl until frothy. Depending on how much you like vanilla, consider substituting vanilla extract for the water, or add ½ a teaspoon of vanilla extract alongside the water.[26]

    Toss the pecans in the egg white mixture.

    Mix the sugar mixture into the pecan mixture. Stir until the pecans are evenly coated.[27]
    • If you mixed your spices in a plastic bag, you can lift out the pecans with a slotted spoon, put them in the spice bag, and shake to coat.[28]

    Bake, stirring every 15 minutes, until pecans are evenly browned. Cook time should range from 30 minutes to an hour.
    • Cook for approximately 1 hour at 250 degrees F.[29]
    • Cook for 30-45 minutes at 300 degrees F.[30]
