How to Make Deep Fried Stuffed Eggs

Deviled eggs are a great appetizer to serve at a party or potluck, but what if one took it a step further when preparing hard boiled eggs? Try these deep fried eggs with a cheese and egg yolk stuffing.


Makes a dozen pieces; 6 servings

Ingredients

  • 2 cups (475 ml) milk
  • 1/2 cup (65g) flour
  • 1/4 teaspoon salt
  • 1 tablespoon (15g) butter
  • 6 hard-cooked eggs
  • 1/3 cup grated Parmesan cheese
  • 1 egg, slightly beaten
  • 2 cups fine dry bread crumbs
  • Canola or vegetable oil, for deep frying

    Make the initial sauce. Combine the flour, milk, and salt in a saucepan over medium heat. Whisk the mixture continuously to avoid any burning. Add the butter and continue stirring.

    Remove the mixture from the heat when it becomes thick in texture. Cover the top with waxed paper and set it on the side to cool.

    Prepare the eggs. Cut each hard-cooked egg lengthwise in half, so you have symmetrical halves for each egg. Carefully spoon out the egg yolks; avoid breaking or ripping the egg whites as you will be needing them later.

    Add the Parmesan cheese and egg yolks into the sauce. Thoroughly mix well to incorporate everything together.

    Spoon the mixture into the egg whites. You will be creating another "half" of the egg white, so it appears as if you have a whole egg.

    Dip the stuffed egg into the beaten egg and bread crumbs.

    Chill the eggs in the refrigerator for an hour. This helps harden the mixture together and makes it easier to cook.

    Deep fry the eggs. Fill a deep frying pan with at least a cup or so with vegetable oil. Fry the eggs for about a minute or two on each side, or until golden brown.
