How to Make Fluffy Pancakes

American or Canadian pancakes (also known as hotcakes or flapjacks in the U.S.) contain baking powder, and usually contains different proportions of eggs, flour, and milk, which create a thick batter. Cinnamon and sugar can be added. This batter is either ladled or poured onto a hot surface, and spreads to form a circle about ΒΌ or 1/3 inch (1 cm) thick. The raising agent causes bubbles to rise to the uncooked side of the pancake, at which point the pancake is ready to be flipped. These pancakes, very light in texture, are often served at breakfast topped with maple syrup, butter, peanut butter, jelly, jam, or fruit. These are light and fluffy pancakes that anyone can make. The recipe makes quite a lot of batter so if you don't cook it all up place cling over it the bowl and store in your fridge. It will keep for up to 3 days.

  • Serves: About 10-15 people


  • 2 cups (250 grams) of plain flour
  • 3 teaspoons (15 grams) of baking powder
  • 2 tablespoons (25 grams) of sugar
  • 2 cups (475 ml) of milk
  • 2 eggs
  • 4 teaspoons (60 grams) melted butter, slightly cooled
  • Extra butter for cooking

    Melt butter in a microwave proof container. Set aside.

    Place the flour, baking powder & sugar in a separate mixing bowl, mix until combined

    Make a well in the center of the mix. Add eggs & milk. Mix until well combined.

    Add the melted butter. You might need to reheat the butter in the microwave for around 20 seconds if it has cooled too much.

    Heat a pan or wok over a medium heat. Add extra butter to the pan and spoon or ladle mixture into a circle. Reduce heat to low.

    Cook until bubbles appear on the top of the uncooked side. Then flip with a spatula or egg flip. cook for 1 1/2 min.

    Place on a plate. Serve with topping of your choice (maple syrup, butter, strawberries, blueberries, or cinnamon)


  • Be careful not to flip the pancake to high if you are using the egg flip as it may stick to the ceiling(if it's low) or may land on the side of the pan(which is wasted) or even burn yourself if it lands on your hand.
