How to Make Gulab Jamun Using Sweet Potatoes

Gulab jamun is an Indian dessert dish that can be made in various ways. One such variation is to use sweet potatoes, to give a lovely texture and a little vitamin C.

Ingredients

Gulab jamun:

  • 1-2 large sweet potatoes or 3-4 smaller ones
  • 4 teaspoons of plain/all-purpose flour
  • 3 teaspoons cornflour
  • Oil for frying

Sugar syrup

  • 150g sugar
  • 250ml water

Part 1
Boiling the sweet potatoes

    Peel the sweet potatoes.

    Boil the sweet potatoes. Remove from the heat when boiled.

    Mash the sweet potatoes. Mix in the flour and cornflour until well combined.

    Roll into small balls. Roll in the palm of your hand. They should look nice and smooth when made.

Part 2
Frying the gulab jamun balls

    Heat oil in a saucepan or wok. Peanut oil is a good choice, as it can handle heat well.

    Add a few balls at a time. Fry until golden brown. This may take 7 to 12 minutes.

    Remove using a slotted spoon or tongs. Place on kitchen paper to drain.

    Continue frying until all balls have been made. Keep to one side.
    • You can keep them warm in a low heated oven if you like.

Part 3
Making the sugar syrup

    Bring the water to a boil.

    Add the sugar. Stir until all of the sugar dissolves.

    Keep boiling until it thickens slightly. Remove from the heat.

Part 4
Preparing the dessert

    Place the gulab jamun balls into separate dessert bowls.

    Trickle the sugar syrup over the top of each one. Garnish with cardamom pods and rose petals.

Tips

  • The balls should be small to medium sized. Don't make them too large.
  • The balls can be soaked in the syrup and gently heated prior to serving if preferred. Do not overheat or the syrup will thicken too much.

Warnings

  • Don't keep the balls for too long in the oil; they can burn or toughen too much.
