How to Make Ice Cream Cupcakes

You don't have to make an ice cream cake. Make these decadent treats instead! They are very delicious and decadent desserts and you don't even have to go to your local bakery or ice cream parlor!

Ingredients

  • Chocolate chips
  • Cake mix
  • Ice cream
  • Cupcake decorations
  • Cupcake liners

Steps

    Make the cupcake shells. Individually put the cupcake liners on a baking sheet that fits inside your freezer.

    Using your microwave, melt the chocolate chips. Do it over heat and stir continuously so burning is avoided. Using the pastry brush, and avoid skimping to keep your cupcake from cracking. Then let the chocolate shell sit in the freezer.

    Bake the cupcakes according to the instructions provided by your cake mix. Do this using a muffin pin or a separate set of liners.

    Once the cupcakes have cooled, take them out of their liners. Then cut them in half to separate the top and bottom. Cut a circle out of the center of the top half with a knife.

    Assemble the ice cream cupcakes. Remove the cupcake shells and ice cream from the freezer. Let the ice cream soften. While you're waiting, put the bottom halves of each cupcake on that of each chocolate shell. Then add a small scoop of ice cream to each, and cover with the top half of each cupcake. Return everything to the freezer so it can set.
