How to Make Lemon Krumkake

Krumkake is a delicious, delicate, and crunchy Norwegian waffle sugar pancake waffle cookie. These cookies look hard to make, but are actually very easy once you get the hang of them. You'll need a special krumkake iron, but you can pick one up for not a lot of money on ebay or online.

    Whisk together 3 eggs, until well beaten. Add 1/3 cup sugar and beat well. Set aside.

    Melt 1/2 cup butter or margarine, let it cool slightly and add to the egg mixture. Beat well.

    Add 1 teaspoon lemon extract and 1/2 cup flour to the mixture. Beat well to combine, making sure there are no lumps.

    Heat your krumkake iron: Place the iron directly over a burner on your stove. Set the burner to medium heat, and let the iron heat up. You will have to heat both sides of the iron. Test to make sure it's hot by sprinkling a few drops of water on it. If the water sizzles, it's ready.

    Grease the inside of your iron with either oil or baking spray.

    Spoon one teaspoon of batter onto the iron. Close the iron and gently squeeze the handles together. (If batter comes out of the sides, you've put too much in. Just scrape it off with a knife.) Bake the cookie for 5 to 10 seconds, then flip the iron over and do the other side.

    Bake the cookies until they are a light golden brown.

    When the cookie is done, gently lift it out of the iron using a fork. Working quickly, wrap the cookie around the wooden cone (that comes with your iron) and let it sit until it cools, about 20 seconds. Gently remove the cookie and place seam-side down on a wire rack.

    Store the cookies in an airtight container, stacking only 1 to 2 deep to prevent cracking.


  • Your first few may be duds, like with pancakes, but once the iron has been seasoned, the cookies will be much more uniform.
  • If you lift up the iron to check on the cookie, and it sticks to the top, it's not ready.
  • You can make krumkake with any kind of flavoring you like - just exchange the lemon extract for vanilla, almond, orange, or your favorite flavoring.
