How to Make Mint and Parsley Hummus



Hummus is a delicious dip made from chickpeas. This version is a tasty variation uses fresh herbs to provide a refreshing upgrade to your usual hummus.

Ingredients

  • 15 oz/425g can chickpeas
  • 1-2 cloves garlic, crushed
  • 4 tbsp/60g tahini
  • 2 tbsp/30ml olive oil
  • 3 tbsp (45ml) lemon juice
  • 1/2 tsp/2.5g cumin, ground
  • salt and pepper to taste
  • 1 tbsp/15g fresh parsley, chopped
  • 1 tbsp/15g mint, chopped

Steps

    Place the chickpeas into a blender.

    Add the garlic, tahini, oil, lemon juice and seasonings.

    Blend the ingredients together until smooth. Once smooth, add the mint and parsley. Blend in.

    Pour the dip into a serving dish. Drizzle over some virgin olive oil, add a sprinkling of pine nuts, paprika and chopped fresh herbs as in the photo accompanying this article.

Tips

  • Serve with pita bread.
  • Common dips to add with hummus include tzatziki, beetroot dip and eggplant dip.
