  • 7 egg yolks
  • 2/3 cup of granulated sugar
  • 2 ½ cups of whole milk
  • ½ cup of heavy cream
  • ½ Tbsp of vanilla extract
  • ¼ tsp of salt
  • ¾-1 cup Nutella for flavor
  • 1 cup heavy cream
  • 8 oz of semi-sweet bakers chocolate
  • ½ tbsp instant coffee

Part 1
Preparing the Ice Cream

  1. 1
Separate egg yolks from the whites, and place the egg yolks in a bowl. Save egg whites for a healthy omelette later.
  2. 2
Pour milk and heavy cream into a saucepan. Put on the stove on medium/low heat and allow it to come to a simmer for about 7-8 minutes (make sure it does not boil).
  3. 3
While the milk and cream mixture is heating, place the egg yolks and sugar in a bowl together. Blend with hand mixer for a couple minutes until everything is well combined; then set it aside for a bit.
  4. 4
Add the Nutella to the saucepan. Stir until the Nutella has completely melted and combined with the milk and cream.
  5. 5
Once the milk and cream in the saucepan start to simmer, take ½ cup of the milk and cream mixture and add to the bowl with whisked egg yolks and sugar. Stir continuously as you add the hot milk and cream to keep the eggs from curdling.
  6. 6
Continue adding the milk and cream mixture until all of it is in the bowl with the eggs. Give it a good stir
  7. 7
Pour mixture back into the saucepan and take it back to the stove. Cook on medium/low heat for 10 minutes *make sure it does not boil*. Stir until texture of cream and egg mixture thickens enough to coat the back of a wooden spoon.
  8. 8
Strain the hot liquid through of fine sieve into a large bowl. Add the vanilla and salt and mix. Cover with plastic wrap making sure that the plastic wrap is actually touching the custard.
  9. 9
Leave a bowl in the refrigerator to cool down over night.
  10. 10
Make sure the insert of ice cream machine is in the freezer according to the the manufacturer instructions.
  11. 11
Turn on you ice cream machine and pour custard base into the machine. The time to freeze gelato depends on what machine you have. Look at the instructions that came with your ice cream maker.

Part 2
Preparing the Ganache

  1. 1
While the ice cream machine is running, put the 1 cup of heavy cream and ½ tbsp of instant coffee in microwave for 2 mins.
  2. 2
Once the heavy cream is heated, add in 8 oz of semi-sweet chocolate. Let it sit for a minute before stirring till well incorporated. (if it does not completely incorporate put it in the microwave for 30 second blasts mixing well between each).
  3. 3
Leave aside on counter to cool down until gelato is ready.

Part 3
Mixing it Together

  1. 1
Once the gelato is ready, spoon 1/3 of the mixture into a container and 1/3 the ganache and use a knife to swirl it through your container. Add the next third of ice cream on top and the other half of the ganache and swirl with knife again. Repeat for the final amounts.
  2. 2
If the texture of the gelato is too hard to swirl, leave it out to sit for a couple minutes until it soften enough to swirl the knife through.
  3. 3
Put the container in freezer to set for about an hour.
  4. 4
    Scoop, serve and enjoy!

  • If you do not have an ice cream maker, skip step 7 and instead after leaving your custard base overnight in the fridge pour it into a wide dish and give it a good whisk for about 1-2 minutes. For the next 7 hours after every 30-45 minutes take it out of the fridge and whisk it well for a couple minutes.
