How to Make Mushroom Duxelles

Mushroom duxelle in its many forms is a staple basic component recipe in formal cooking as well as many other more casual dishes. Its an old fashioned recipe but very easy to do.


  • 250g of mushrooms.
  • 1 small onion
  • 1 clove of garlic
  • 1 tsp chopped fresh parsley
  • A little butter (approx 1 tablespoon)
  • Salt and pepper to taste

    Peel and finely chop your mushrooms, onion and garlic.

    Heat a frying pan and melt the butter. Cook gently until the foam subsides and the butter start to turn a light nut brown colour and nutty aroma.

    Add the mushrooms, onion and garlic and stir to coat in the butter.
    • The heat must be adequate so that they will fry gently, but not stew or burn.

    Add the parsley, salt and pepper to taste and stir well.

    Check for flavouring.

    To use the duxelle, it may be added:
    • Direct as a stuffing, or in with other stuffing ingredients,
    • In a cream style soup, or spread on a crusty baguette
    • Mixed with cream or bechamel white sauce and stirred into pasta, placed into vol-au-vents or pastry as small mushroom pies.
    • Slice the mushrooms (instead of finely chopping them) and fry them in exactly the same method as above and serve as a side dish.
    • Stirred into risotto or with mashed potato.


  • It is best to monitor the temperature carefully. If the temperature is too low and it stews, cook the duxelle until the liquid has evaporated, however it will not taste as good.
  • A delicious and quick way to cook this recipe is to slice the mushrooms and to stir fry them on the BBQ as a side dish to your other barbecued dishes.


  • Don't add the salt until the end as it will draw out the moisture and make them stew.

  • Frying pan and spatula or stirrer.
  • Chopping board and knife.
