How to Make Mushroom Rigatoni

  • 3/4 box of rigatoni pasta
  • 1/2 ounce of dried mushrooms
  • 4 ounces of fresh mushrooms
  • 1 clove of garlic, minced
  • 1/4 cup of olive oil
  • 1/4 teaspoon of sea salt
  • 1/4 teaspoon of black pepper
  • 1 container of alfredo sauce

    Cook the rigatoni pasta according to the package directions, reserving 3/4 cup of the cooking water. After the pasta is tender, drain it and return it to the pot.

    Boil dried mushrooms in 2 cups of boiling water for 15 minutes or until tender. After draining, squeeze the mushrooms, removing additional liquid; finely chop mushrooms.

    Cook fresh mushrooms in olive oil over medium-high heat (do this in a medium skillet). Do this for about 5 minutes, or until liquid is evaporated.

    Heat the alfredo sauce for about 7 to 10 minutes. Do this in a medium non-stick saucepan over medium heat. Add mushrooms, parsley, and garlic; cook and stir for 1 minute. Remove from heat and season with salt and pepper.

    Combine the rigatoni pasta and alfredo sauce mixture.

    Serve immediately.


  • You can substitute the rigatoni pasta for your favorite pasta, whether it be penne, linguini or bow-tie.
  • If you want more protein in the dish, try adding, grilled/sauteed chicken or turkey, or ground beef. These meats are high in protein and can make the dish more filling.
  • Stir the pasta as it cooks to ensure that the noodles do not clump together.
  • Watch the pasta carefully; pasta can overcook quickly.
  • To tell if the noodles are done, you can try cutting a noodle in half and looking at the color consistency. If the noodle is the same color from inside to outside, the noodles are done.
  • Alfredo sauce comes in different flavors. Instead of original, you can try "four cheese" or "sun-dried tomatoes" to add a flavorful kick to compliment the mushroom.


  • Be careful around boiling water and the heat source. Be sure to use pot holders when draining the pasta to avoid being burned by the hot water.
  • Remember to fully cook all meats, poultry, seafood, and eggs. Raw consumption of these foods can increase the risk of foodborne illness.
