How to Make Mustard Finger Chips

This is a variation of finger chips flavoured with mustard paste or mustard sauce and is very spicy. Serves 1.

Ingredients

  • 2 large potatoes - cut into finger chips size
  • 1 tablespoons mustard
  • 15 to 20 peeled cloves of garlic
  • 3 green chilies
  • Salt to taste
  • ¼ teaspoon turmeric powder
  • ½ teaspoon of chili powder (optional)
  • Vegetable Oil for deep frying and a small amount to blend the ingredients
  • 1 teaspoon corn flour

    Wash the chipped potatoes and leave to drain on kitchen paper or a clean kitchen towel.

    Combine all the items except potatoes and a small amount of oil into a blender. Add some water and make it into a smooth thick paste if required.

    Put the chipped potatoes into a mixing bowl.

    Pour the paste onto the potatoes along with the cornflour and mix well with a spoon or clean hands.

    Leave the mixture for a few minutes.

    Heat the oil to approximately 375 F in a heavy based pan and then carefully drop the potatoes into it. Be careful not to overload the frying pan with too many pieces, as the pieces will not get cooked.

    Fry the chips for around 7-8 minutes with occasional tossing to cook them evenly.

    Remove cooked chips from the oil.

    Place the cooked chips onto kitchen paper to absorb any excess cooking oil.

    Serve with the sauce of your choice, for instance tomato sauce or mayonnaise.

Tips

  • You can use mustard sauce instead of raw mustard - this can be added after mixing all the other ingredients for blending into a paste.

Warnings

  • Vegetable oil when splashed on skin will cause serious burns.
  • Blenders have very sharp blades.
  • Do not over fill the pan with oil.
  • Be aware that hot oil on the hob if spilled could catch fire.
  • Ensure that you thoroughly wash your hands after preparing chilies because contact to your eyes can be very painful.
