How to Make Pork Roast with Garlic and Rosemary

Pork Roast with Garlic and Rosemary is a flavorful way to serve a boneless pork loin. The following recipe can be baked or cooked in a covered grill such as a Weber grill. Outdoor cooking lends a smokey flavor that enhances the flavor. Serves 6 to 8 generously.

Ingredients

  • 6 cloves garlic, skins removed
  • 2 tablespoons dried rosemary
  • 2 tablespoons olive oil
  • 3 pounds boneless pork loin
  • Salt and pepper

Steps

    Prepare your grill. Using your favorite method light the grill. Have a bed of coals on one side of the grill, if you are using charcoal briquettes.

    Close the grill and head to the kitchen to prepare the pork roast.

    Add the garlic and rosemary to a food processor bowl. Use a small bowl, if you have one. You can also use a stick blender and add the ingredients to the stick blender bowl.

    Add the olive oil.

    Cover the container and process the garlic, rosemary and olive oil until the mixture slightly thickens. The garlic and rosemary should be slightly crushed.

    Cut 6 to 8 slits on top of the pork loin.

    Fill the slits with the garlic mixture. You can use your clean hands to do this.

    Spread any remaining garlic mixture over the top of the roast.

    Wash your hands with soap and water.

    Lightly sprinkle salt and pepper over the pork loin.

    Head outside to the grill.

    Push the charcoal briquettes to one side.

    Grill the pork loin over the briquettes to brown and seal the roast.

    Move the pork loin away from direct heat and allow to cook until the pork tests done. The USDA recommends pork loin be cooked to 145 °F (63 °C). The USDA states it takes about 20 minutes per pound to roast an oven at 350 °F (177 °C). Use this as a general guide when grilling the pork loin.

    Check the pork roast with an instant read meat thermometer to make sure the temperature is 145 °F (63 °C).

    Remove the pork loin to a cutting board and let the pork loin rest for a minimum of 3 minutes. Slice and serve.

Oven

  1. Omit grilling directions. Brown the pork loin in a small amount of olive oil, if desired.
  2. Bake the pork loin at 350 °F (177 °C). Allow 20 minutes per pound.
    • If you are grilling or roasting a 3 pound pork loin, it should take approximately 1 hour to cook the pork
